为了解辖区食堂餐饮具清洗状况、提高餐饮具清洗质量,2022—2024年随机抽取辖区12个职工食堂清洗消毒的餐饮具进行表面洁净度检测。结果显示,辖区食堂餐饮具表面洁净度合格率为89.7%,洗碗机实际清洗效果不及手工清洗,建议结合手工清洗与机械清洗,提升洗净度。进而提出采用适应的清洗方法、规范清洗流程、完善管理制度、加强餐饮具清洗卫生监管等提高辖区食堂餐饮具洁净度的建议。
Abstract:In order to understand the cleaning status of tableware in canteens in the jurisdiction and improve the cleaning quality of tableware, tableware cleaned and disinfected in 12 staff canteens in the jurisdiction was randomly selected from 2022 to 2024 for surface cleanliness testing. The results show that the qualified rate of surface cleanliness of tableware in canteens in the jurisdiction is 89.7%, and the actual cleaning effect of dishwasher is not as good as manual cleaning. It is suggested to combine manual cleaning with mechanical cleaning to improve the cleanliness. And then put forward to adopt adaptive cleaning methods, standardize the cleaning process, improve the management system, strengthen the sanitary supervision of tableware cleaning and other suggestions to improve the cleanliness of canteens in the jurisdiction.
